Tomatoes and eggs | diamond fork
This is what I made for lunch yesterday. A great summer meal, it is very light and healthy. It's also quick to make, for your lazy days. One portion has only 230 calories, so you can add a slice of wheat bread for the taste. Rosemary is probably the best spice for this meal, it gives the eggs a very mediterranean taste.
Ingredients
- 2 tomatoes, sliced (300g)
- 2 medium eggs
- spices: salt, rosemary, oregano, tarragon
Directions
- Put the tomatoes in a pan and simmer, untill all the liquid boils.
- Crack eggs into a glass and mix them with a fork.
- Pour the eggs into a pan and mix it up.
- Cook for another 10 minutes, mix every three minutes along with decreasing the temperature.
- Add the spices and mix for the final time.
- Serve warm, with a side of bread and lemonade.
