Tomatoes and eggs | diamond fork

This is what I made for lunch yesterday. A great summer meal, it is very light and healthy. It's also quick to make, for your lazy days. One portion has only 230 calories, so you can add a slice of wheat bread for the taste. Rosemary is probably the best spice for this meal, it gives the eggs a very mediterranean taste.

Ingredients
  • 2 tomatoes, sliced (300g)
  • 2 medium eggs
  • spices: salt, rosemary, oregano, tarragon


Directions
  1. Put the tomatoes in a pan and simmer, untill all the liquid boils.
  2. Crack eggs into a glass and mix them with a fork.
  3. Pour the eggs into a pan and mix it up.
  4. Cook for another 10 minutes, mix every three minutes along with decreasing the temperature.
  5. Add the spices and mix for the final time.
  6. Serve warm, with a side of bread and lemonade.
