Oat cake | diamond fork

I tried making this cake some years ago, but today I decided to change the recipe up a bit, to make it a little less caloric. In total, this cake has 705 kcal, but you can serve it in slices or smaller bites and calculate from there.

Ingredients

  • 1 cup oats
  • 1 tbsp sugar
  • 10 tbsp milk
  • cinnamon
  • 170 g low-fat Greek yogurt
  • 1 banana (100 g)
  • 2-3 apricots (80 g)


Directions

  1. Mix oats in a blender.
  2. Add sugar, milk and cinnamon. You can mix it using a blender or with a fork.
  3. Note that the dough is very dry, so you can add milk if you want to.
  4. Spread the dough on a baking tray and bake for 20 minutes on 175 °C.
  5. When it is baked, take it out of the oven and spread Greek yogurt on it.
  6. Slice the fruit and put them on the cake.
  7. Serve cooled, but fresh.

Very hard to get it wrong. You can use cottage cheese or yogurt instead of Greek yogurt, you can add butter or flour in the dough, and use different fruit each time you make it. Very simple and very quick.
