Banana Muffins | diamond fork

I tried making the banana muffins recipe I found on spiceupthecurry.com quite some time ago. It's great for vegetarians and even vegans, but I wouldn't recommend it to diabetics. I didn't have all the ingredients, so I improvised a little and was super unbothered doing it. One out of eleven muffins had 100 kcal. The muffins were delicious, but maybe a little too sweet. Try adding less sugar to perfect the recipe. Also, I need to find a good muffin tray.

Ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • 0,5 tsp cinnamon
  • 2 medium bananas
  • 1 tbsp oil
  • 1 cup sugar
  • 1 tbsp cocoa powder

Directions

  1. In a bowl, take all purpose flour, baking powder and cinnamon. Stir until everything is mixed well. 
  2. In another bowl, mash the bananas using fork. 
  3. Add oil and beat it well.
  4. Add sugar and beat until sugar is dissolved.
  5. Add dry flour mixture to it and mix until everything is incorporated well.
  6. Lastly, add cocoa powder. You can also add chocolate chips or nuts.
  7. Divide the batter into 11 muffin cups.
  8. Bake them in a preheated oven to 190 °C, for 25 minutes. They are baked when you insert a toothpick into a muffin and it comes out clean.
