Banana Muffins | diamond fork
I tried making the banana muffins recipe I found on spiceupthecurry.com quite some time ago. It's great for vegetarians and even vegans, but I wouldn't recommend it to diabetics. I didn't have all the ingredients, so I improvised a little and was super unbothered doing it. One out of eleven muffins had 100 kcal. The muffins were delicious, but maybe a little too sweet. Try adding less sugar to perfect the recipe. Also, I need to find a good muffin tray.
Ingredients
- 1 cup flour
- 1 tsp baking powder
- 0,5 tsp cinnamon
- 2 medium bananas
- 1 tbsp oil
- 1 cup sugar
- 1 tbsp cocoa powder
Directions
- In a bowl, take all purpose flour, baking powder and cinnamon. Stir until everything is mixed well.
- In another bowl, mash the bananas using fork.
- Add oil and beat it well.
- Add sugar and beat until sugar is dissolved.
- Add dry flour mixture to it and mix until everything is incorporated well.
- Lastly, add cocoa powder. You can also add chocolate chips or nuts.
- Divide the batter into 11 muffin cups.
- Bake them in a preheated oven to 190 °C, for 25 minutes. They are baked when you insert a toothpick into a muffin and it comes out clean.
Here are the pictures of the original muffins and of the muffins I made. But hey, at least they tasted good!
