Pesto | diamond fork
This is not the usual pesto, but I liked the recipe so I went with it anyway. Its base ingredient are carrot leaves. Because of the olive oil and walnuts, it's high in calories and has also rich nutritional value.
Ingredients
- 2 cups carrot leaves
- 1 cup basil
- 1/2 cup walnuts
- 1/2 cup olive oil
- 1 clove garlic
- salt
- squeeze of lemon
Directions
- Mix the ingredients in a blender.
- Serve the pesto as an appetizer, sauce or a side dish.
I made the pesto as a sauce for pasta. I used shirataki pasta, that have zero nutritional value and only 4 kcal per 100g. I cooked them in water for 3 minutes, then I drained them and roasted them in a pan with the pesto. That way, the shirataki absorbed the pesto's taste.

The high calories aren't worth it. I squeezed too much lemon and there were also some strings from carrot tops. The sauce is great because it doesn't need any cooking, so you can serve it right away. Great for a quick summer lunch.
