Buffalo cauliflower | diamond fork
This is what I had for lunch today. I found the recipe on buzzfeed.com, but I didn't have all the ingredients so I added a little twist. The meal was super fulfilling and it's even great for those who are not fans of cauliflower. The baked cauliflower has 280 kcal and the sauce has 60 kcal.
Ingredients
- 200 g of cauliflower (half a head)
- 3/8 cup flour (90 ml or 50 g)
- 3/8 cup 1,5% milk (90 ml)
- 1 tsp paprika
- salt, pepper, oregano
Directions
- Preheat oven to 230 °C.
- Break the cauliflower into florets.
- Put them in a large mixing bowl. Add flour, milk, paprika and other spices.
- Mix and make sure each piece is evenly coated.
- Bake for 20 minutes, flipping halfway.
Sauce
- 80 g hot salsa
- 1 tsp sugar
- a squeeze of lemon juice
- parmesan for taste
- Mix everything together. I don't like my salsa to be too hot, but I've learned that adding sugar, acids or dairy products eases the taste.
- Use the sauce to dip the cauliflowers.

The cauliflowers were well made, they tasted a little like potatoes and chips.
I baked on fanned oven heat, maybe next time try upper and lower heating.
The sauce was still too hot for me, so I cooled down with a popsicle.
