Fried Rice & Beetroot | diamond fork

Butter makes everything better, but milk is a great substitute. I found recipe for fried rice online and mixed some beetroot in it, to make a colorful statement. It makes for two servings, scroll down for nutritional value.

Ingredients


  • 180 g beetroots, cooked
  • 1 tbsp milk, 1,5% fat
  • 1 clove garlic
  • 90 g white rice

Directions


  1. Put rice in water, for 90 g you need around 200 ml. Bring to boil.
  2. When it boils, cover and reduce the temperature. Simmer until rice absorbs water.
  3. In a blender, mix beetroots, milk and garlic. Add butter if you have it. Blend smoothly.
  4. When rice is cooked, put it in a pan with a sauce. Heat, while mixing.
  5. Serve with Parmesan cheese or mint which works well with beets.

Not for beetroot haters, but I have always loved beets and therefore I loved this fried rice. Beets are super healthy and rice is very nutritional. A very healthy lunch or dinner option. You can serve it as a side, or make just the sauce and serve it with pasta or potatoes.
