Grandma's zucchini patties | diamondfork
hi, i haven't cooked or baked anything in a while now. i've been busy - with school and lately work. i was on a holiday with my family, we went sailing, and one day on a boat was my turn to cook lunch for everyone. this recipe is my grandmas and when i visited her once, she made these patties and i fell in love. i just needed to eat this again!
so here's how i made them:
2 eggs
2 tbsp flour
2 tbsp breadcrumbs
salt
pepper
chopped parsley
garlic
oil
the patties were an instant hit! everybody on the boat loved the taste of zucchini and eggs together and really complimented the food. even the meat lovers liked the lunch. a huge thanks to my grandma for giving me this recipe!
so here's how i made them:
Ingredients (for 2):
0,5 kg (1 lb) zucchini2 eggs
2 tbsp flour
2 tbsp breadcrumbs
salt
pepper
chopped parsley
garlic
oil
Directions:
- Grate the zucchini and salt it, then leave it to rest.
- Crack the eggs in a bowl, then add flour, breadcrumbs, salt, pepper (to taste), parsley and garlic.
- Squeeze the zucchini and get rid of the water that comes out.
- Add the zucchini to the eggs and mix well.
- Warm up some oil in a pan, then add the mixture to it with a spoon. The mixture should be liquid, but not to worry - eggs fry in oil. For one patty, two spoons are needed.
- Serve with potatoes - mashed or baked.
