Pumpkin pie | diamond fork

This recipe was from my fall bucket list, because I have always wanted to try and bake a pumpkin pie, regular, old-fashioned pumpkin pie form scratch. It wasn't as simple as I thought at first, but it turned out to be quite tasty. I didn't have the right pie pan, so I had some trouble with rolling out the dough. Baking this pie from scratch also takes some time as you have to refrigerate the dough and bake for quite some time. 

Pie crust

Mix together 100 g of sugar and 200 g of butter. Add 1 egg and 300 g of flour. Use hands to incorporate the ingredients well. Form a ball, wrap it in plastic foil and put it in the refrigerator for 30 minutes.

Pumpkin puree

Cut half a pumpkin into small pieces and cook in water for 30 minutes. Drain the pumpkin and make a puree using a food processor. I cooked the whole pumpkin and made enough puree for a pie, pumpkin cookies and soup.

Ingredients

  • pie crust
  • 2 eggs
  • 70 g sugar
  • 60 g brown sugar
  • 450 g pumpkin puree
  • 150 ml whipping cream
  • 1,5 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp salt

Directions

  1. Mix eggs and both sugars in a bowl.
  2. Add puree, cream, cinnamon, ginger and salt. You can also add other spices, such as ground cloves and allspice.
  3. Roll out the dough and put it in a pan. Don't grease the pan beforehand as the dough is greasy enough.
  4. Pour the filling in the pie shell.
  5. Heat the oven to 200 °C. Bake for 15 minutes.
  6. Bake on 180 °C for another 35-45 minutes.
  7. Let cool for 2 hours, then serve with whipped cream.

For me, this pie wasn't the easiest thing to bake. I had some complications with the crust, because I didn't have the right pan. I also oiled my pan and the crust didn't want to stick to the walls of the pan. Therefore, the pie didn't look very good when I took it out of the oven. I tried filling before the baking and I didn't like it, that's why the good taste of the baked pie surprised me very much. I didn't serve the pie with whipped cream, but it was delicious anyway. This pie is great for family events, such as Thanksgiving, Christmas, or birthdays in fall.
