Tomato, cucumber & avocado salad | diamond fork

I had half an avocado to use, so I googled some recipes, to get an idea for lunch. I found this salad and even though I was taken aback at first, I wasn't disappointed at all. Not only is the salad perfect for summer, it also tastes delicious. Of course, I had to change things up a bit, because I didn't have all of the ingredients. Here's how I did it:

Ingredients

  • 2 tomatoes, medium sized
  • 1/2 cucumber
  • 1/2 avocado
  • 1 small onion
  • salt
  • pepper
  • parsley
  • lemon juice


Directions

  1. Cut the tomatoes, cucumber and avocado into cubes.
  2. Add chopped onion and parsley.
  3. Squeeze a bit of lemon onto the salad, but be careful and don't oversqueeze it. You can use vinegar and olive oil instead.
  4. Add salt and pepper to taste.

This gets the highest rating, because it surprised me so much. Of course, tomatoes and avocados are used for guacamole, but I had no idea it works so well with cucumber too. Lemon juice might make tomatoes and cucumber a bit bitter, but it brings out the taste of avocado. 
This recipe is vegan, but you can always add some extra cheese (feta or mozzarella).
