LOW-CAL Macaroni & Cheese | diamond fork

I haven't cooked something for myself in a while, so for the first thing after the holidays I decided to make some comfort food. I found this recipe on BuzzFeed, and I decided to try it. This recipe is supposed to be vegan, because it uses nutritional yeast instead of cheese, and nut milk instead of cow. However, I'm not vegan, I just wanted to make a low calorie version of the sauce, using nutritional yeast that has been popular in these times. The "cheese" part has only 230 kcal and makes for 100 g of uncooked pasta.

Ingredients

1/2 tbsp butter
1/4 onion, diced
1 clove garlic, small
1/2 tbsp flour
salt
pepper
1/2 tbsp paprika
2/3 cup milk, 1,5% fat
1/4 cup nutritional yeast
100 g pasta

Directions

  1. Boil water, then add pasta.
  2. In a pan, add butter and melt on a medium temperature. Add onion and garlic and cook until soft. 
  3. Add flour, salt, pepper, and paprika.
  4. Add milk and stir. Cook for 3-5 minutes and whisk frequently so the mixture gets thicker.
  5. Add nutritional yeast and mix well.
  6. When the pasta is cooked, strain it and add it in a pan. Mix with the sauce.
  7. Serve immediately with Parmesan or a salad on the side.

I've never had mac and cheese before, but I'm sure that's not how it tastes. Nevertheless, the taste isn't bad at all. This mac&cheese makes for a great comfort meal and the recipe is great for vegans, too. Use coconut oil instead of butter, and nut or soy milk instead of cow milk. 

What is nutritional yeast? I wasn't sure about this condiment either, but I discovered that we actually have it at home, because my vegan mother bought it for herself some time ago. Here's a video that explains more:
