Cinnamon apple muffins
Fall is finally here and I haven't baked in so long. So I think it was only right to start my fall baking season with something that smells like this season. I found the recipe on Pinterest but, as I always do, I decided to change it up a bit. I just recently bought a new muffin tray and had to try it out. The recipe makes for 12 muffins or 10 big ones, which was my case.
Ingredients
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 2 tsp cinnamon
- 2 eggs
- 1/2 cup (soy) milk
- oil
- maple syrup
- apple
Topping
- 1/3 cup sugar
- 1 tbsp flour
- 1 tbsp margarine
- 1 tsp cinnamon
Directions
- Preheat oven to 200°C (400°F).
- Mix dry ingredients together. Add milk, eggs and about 2 tbsp of oil and maple syrup each.
- Peel the apple and cut it. Then add it in the dough.
- Put muffin cups in the muffin tray.
- In a small bowl mix topping ingredients. You might want to use your hands to incorporate margarine well. In the end, it should look like a crumble.
- Sprinkle the topping on the unbaked muffins.
- Bake for 15-20 minutes, until a toothpick inserted in center of a muffin comes out clean.

I forgot how much I loved muffins, they are easy to make and don't take a lot of time. The topping comes out extra delicious. These muffins are a perfect autumn treat!
